Zucchini Bread

  • 1/3 c. molasses
  • 3 eggs (beaten)
  • 1 c. brown sugar (packed)
  • 3 tsp. vanilla
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1/2 tsp. nutmeg
  • 3 tsp. cinnamon
  • 1/2 c. whole wheat flour
  • 1/2 tsp. baking powder
  • 2 c. zucchini (grated)
  • 2 c. white flour
  • 1/2 tsp. cloves
  • 1/2 c. raisins (optional)
  1. Preheat oven to 350°F.
  2. Grease and flour 2 loaf pans.
  3. Mix together all ingredients in order given.
  4. Pour into the pans.
  5. Bake 45 minutes to 1 hour.

Leave out salt for a lower sodium count.
