Ingredients
  1. 1/3 c. molasses
  2. 3 eggs, beaten
  3. 1 c. brown sugar, packed
  4. 3 tsp. vanilla
  5. 1 tsp. salt
  6. 1 tsp. baking soda
  7. 1/2 tsp. nutmeg
  8. 3 tsp. cinnamon
  9. 1/2 c. whole wheat flour
  10. 1/2 tsp. baking powder
  11. 2 c. zucchini, grated
  12. 2 c. white flour
  13. 1/2 tsp. cloves
  14. 1/2 c. raisins (optional)
Instructions
  1. Preheat oven to 350°F.
  2. Grease and flour 2 loaf pans.
  3. Mix together all ingredients in order given.
  4. Pour into the pans.
  5. Bake 45 minutes to 1 hour.

  1. Leave out salt for a lower sodium count.
