Ingredients
  1. 2 boneless chicken breasts
  2. 1/4 c. chopped green onions
  3. 1 (4 oz) can diced green chili peppers
  4. 2 T. minced garlic
  5. 1 1/2 T. curry powder
  6. 1 T. chili powder
  7. 1 tsp. cumin
  8. 1/2 tsp. cinnamon
  9. 1 T. lime juice
  10. 1 1/2 c. water
  11. 1 (7 oz) can coconut milk
  12. 2 c. white rice, cooked
  13. Chopped cilantro, for garnish
Instructions
  1. Combine chicken, green onions, green chili peppers, garlic, curry powder, chili powder, cumin, cinnamon, lime juice, and water in the slow cooker.
  2. Cover and cook on LOW for 7-9 hours.
  3. After cooking time, shred chicken with a fork, stir in coconut milk.
  4. Turn the slow cooker to HIGH and cook for an additional 15 minutes.
  5. Serve ½ chicken breast with ½ cup cooked rice and garnish with cilantro.
